There was plenty of wood on the palate – wood shavings, sandalwood, liquorice root etc – but we also tasted cinnamon apple pie, cherries in dark chocolate, candy corn and sweet floral perfumes. Adding water brought dried fruits, spun sugar and Viennese coffee with fig to the nose. Silky smooth textures in the mouth coated ginger, cinnamon and chillies with cocoa powder, burnt toffee and barbecue sauce before the peppery, dry spice of rye emerged. Water unveiled golden raisins in sticky toffee pudding drizzled with dark navy rum and served with nutmeg, coconut and cloves in ginger and rye bread. We remarked on its classical and rich American bourbon profile. With water we got boiled aniseed sweets, aged triple sec, blackcurrant sweets, herbal liqueurs and the menthol tang of tea tree oil. The palate opened with lovely notes of lapsang souchong tea with sugar, eucalyptus oil, ginger wine, camphor and menthol balm, and lanolin. Some sweet mint julep cocktail notes and cough syrups were also detected.
