With water a heavy maritime influence suggested ship's ropes and thick tar with seaweed, barnacles and mussels. We got cinnamon breakfast cereals, toasted muesli, coconut macaroon and bounty bar. We also noted lemon curd, hibiscus flower and freshly laundered fabrics. Reduction brought lanolin, citrus rinds, zingy grapefruit, heather broom and hessian. The mouth was warm but full of soft initial notes of white flowers, pineapple cough sweets, jelly beans and fruit salad juices. Easy and very enjoyable. On the palate smoked cod liver drizzled with lemon juice and olive oil on toast as an appetizer followed by Rioja-braised lamb shanks with chorizo. After reduction, the saying to ‘pour fuel on to the fire’ came to mind as we started a barbeque or a bonfire while nibbling on some roasted almonds and wondering what a dash of it would do to a smoky Bloody Mary cocktail. The palate was a dense and rich affair that displayed brazil nuts, jam on oatcakes and the seductive spices of cloves, star anise and crystalised ginger dipped in dark chocolate. A dash of water delivered further dried fruits and nuts but now with cashews and satsumas mixing with orange chocolate, toasted oak and fresh hops. The palate was treacly and creamy with hints of pedro ximenez sherry in lapsang souchon tea and green herbs that joined bergamot and peppermint on the finish. The palate was sweet and intensely flavoured – buttery Danish biscuits, toffee, crème brulée and cinnamon toast, then a warming, mouth-drying finish of ginger, chilli, over-done plum pie and oak. The reduced nose offered barley sugars and apricot flan, nougat, trail mix with hazelnuts and dried coconut and sanded wood on a workbench. On the palate at first, intense sweet pineapple chunks followed by apricot elderflower jam made with St. Germain liqueur before a fruity spiciness set in like a mango ‘con chile y lemon’- a spicy Mexican style prepared mango. Following reduction, we prepared a game terrine with spiced apricot and orange chutney as well as a slowly simmered lamb tagine while on the palate it was more like a creamy chicken afritada with pineapple and as dessert gulab jamun. Juicy fruit salad chunks, bubblegum and winter herbs along with more beer-like hop notes, copper pans and the impression of sushi rice, umami nori seaweed and salmon sashimi with ginger. With water we got leather driving gloves, limoncello, herby focaccia, sweet olive oil and flower honey. The palate opened with milk bottle sweets, coconut milk, thai Basil, sugary porridge, robust maltiness and wee notes of star fruit and hessian. With water we found a shift towards dried herbs, stuffed vine leaves, duck ham, mossy earthiness and white mushrooms.
