Across the East River from Manhattan lies the borough that hosts some of the state’s most exciting distilleries, and \u003cstrong data-mce-fragment=\"1\"\u003eCask No. 142.3 Themes of America \u003c\/strong\u003eis no exception! The single malt crafted here follows a unique protocol that yields equally singular casks. This includes three fermentation characteristics not found in Scotland. First, the use of sour mash where liquid from the previous batch begins the fermentation for the next batch (like sourdough starter). This lends consistency from batch to batch and is a practice not seen in scotch malt whisky production. Second, fermentation is done on the grains, whereas Scotch distilleries lauter off the grain before fermentation, imparting a robust flavour on the resultant whiskey. Finally, fermentation times are extended to two weeks when a typical “long ferment” in Scotland is about five days.  These steps amplify the texture and flavour of the whiskey further, culminating in a well-endowed dram to savour. Much like a dozen or so distilleries in Scotland, the distillation process employs a worm tub condenser that limits the “copper conversation” to produce a bolder spirit with richness and weight. Located in Lawrenceburg, Indiana, distillery B7\/RW5 has been custom distilling for brands that many American whiskey drinkers know and love. Varied mash bills are distilled so we were happy to taste samples from across their range of recipes and curate casks of distinction for our thirsty members! It is considered a high-rye bourbon, since 21% of the recipe is rye grain with a base of 75% corn and just a hint of malted barley for structure (4%). Reduction brought caraway, hardwood resins, varnish, brown bread sauce, tabasco heat and then the cooling balance of a sweet root beer float. The neat palate displayed spiced Ketchup, cherry liqueur, fennel seed, rye bread spread with treacle, cough mixtures and herbal liqueurs.
