Water introduced birch sap, smouldering logs and a herbaceous smoke on the nose. The result gave us heady aromas of plums, marzipan and dark chocolate, black forest gateau, medjool dates, cinnamon sprinkled on orange and Turkish delight in a fragrant wooden box. The palate, complex and fun, had salted caramel, sugared almonds, chocolate hazelnut spread and swathes of fruit, including rhubarb and apple crumble with custard, mango, melon, black grapes and spiced apricots. With water the peat became creamier and sweeter, with added notes of lanolin, punchy medicinal notes, dried seaweed and sardines in olive oil. The slightly more unusual farmy side always lingered underneath. This is a superb, more left-field example of this make. At six years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further.
