We are in the holiday spirit and delighted to share two beautiful single cask whiskies from Wales and England!\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eWales has a sporadic history of distillation dating back to the eighteenth century, but it wasn’t until about twenty years ago that a distillery made a lasting impact. Distillery 128 was the first to come along in one hundred years and has been crafting exceptional Welsh whisky ever since. This distillery differs from most in its use of only one copper pot still for the entire distillation process. Scottish distilleries typically use two stills for distillation – the wash still and spirit still. Distillery 128 uses the Faraday Still that employs a series of perforated plates to help condense the vapors. Where did that come from? Recovered, we added water and found ourselves on the coast with smoked haddock, sweet langoustines and a Japanese seaweed salad.
