On the palate we all got madeira wine; however some tasted the dry sercial served with olives, roasted almonds and Kirsch salami, others the sweetest version, a malmsey with chocolate crumpets. Following reduction, the aroma turned sweeter and smoother, with malt extract, apple shisha and lightly burnt babka. To taste, an explosion of incense smoke preceded warming flavours of cinder toffee and pain au raisin. A varied assortment we agreed. Some water moved things in a distinctly floral direction with physalis, pressed flowers, blackcurrant cordial, mothballs and brown soda bread. The neat palate displayed Moffat toffee, lemon sherbet, lightly phonic cask char, malt extract and heather beers with a medical tang of wintergreen. Reduction brought a more rounded profile with almond flakes, caramelised oatmeal, citrus rinds and buttered toast. The palate started with Battenberg, maple and pecan Danish pastries, jelly beans and raspberry jam, before discovering pencil shavings, liquorice, gingerbread and sugar-coated fennel seeds. The reduced nose had us sitting on a wooden bench in a sunlit lemon grove tasting Black Magic chocolate brazils – a delightful combination. Fiery chilli hotdogs in brine on the palate neat were followed by poached tuna steaks in a sauce gribiche (cornichons and capers) with crashing medicinal waves in between. After the addition of water, a medicinal, salty and mineral scent at first reminded us of camphor and menthol before the sweet smoke of whipped cream, treacle and golden syrup appeared. The neat palate opened with a big hit of pineapple bubble-gum and fruit salad juices. Jackfruit, green pepper, sweet calvados, limoncello and the richness of a dark winter ale. The palate carried delicious creamy textures with coconut and vanilla. Pears served with ginger and clove syrup mellowed into lemon drizzle cake and after dinner mint chocolates. A subtle floral aroma of heather arrived with water before the fruitiness returned with pears, pineapples and limes mixed together in a sorbet. Flavours on the tongue embraced nut husks and linseed oil with a warming heat that mellowed into dried apricots, toffee apples and thick cut marmalade. Water uncovered nut oil and creamy textures that coated woody spices and a fruit bowl of papaya, banana and gooseberries. The neat palate displayed an initial richness with lemon jelly, pineapple syrup, peach schnapps and melon balls. Water brought white stone fruits, lychee cordial and elderflower champagne.
